Cesto
500 g plain flour 3,25 dl water 1 KL salt
Filling
450 g lumpy cottage cheese 1 pk onion 1 bunch parsley to taste salt
Sauce
5 dl water 100 g white yoghurt 1 pk egg to taste salt

The perfect börek that not everyone knows It’s such a simplified version of the real “water” börek, which is a bit more laborious from this one. Although the original is the original, this börek is also delicious

From flour, salt and water, make a semi-soft dough and let it rest for 20 minutes

Make the filling… Mix the cottage cheese, finely chopped onion, chopped parsley and salt as needed. The filling must be a little salty 🙂

Divide the dough into 8 parts and knead into loaves. Then roll each loaf into a thin circle 1 mm thick.

Wipe the baking tray with a little oil. Place the first dough on the baking tray and sprinkle it with a little oil and a little salt here and there. Put the second dough on top and divide the 1st part of the filling evenly over it. This should be divided into 3 parts. Cover again with the dough and repeat this process until the dough sheets have been mined 🙂

Before baking, first cut the burger well with a sharp knife. Then brush with the egg and sprinkle with the chervil. Place the börek in a preheated oven at 200 °C for approx. 30-35 minutes. You need to keep track of it.

While the börek is baking, make the topping. Mix together the water, yoghurt, the rest of the egg from the spread and the salt. The topping should be a little salty.

After about 30 minutes, when the börek is visibly nicely baked, remove it from the oven. Quickly run a knife through the notches again and pour the yoghurt topping over it. Put the börek back in the oven for another 20 minutes. During this time the dough will absorb all the liquid and the börek will be soft 🙂 Have a good taste !!!
