Espuma (mousse) from sour cream

200 g sour cream 100 g Whipping cream 33% 30 g crystal sugar 2 tbsp lemon juice

Espuma, or also mousse, is a great recipe to improve the appearance, but especially the taste. You can also use this espuma as a dessert on its own, e.g. in fruit jars and decorate it according to your own imagination 🙂

Place all the ingredients in a bowl and mix them together.

Transfer the mixture into an iSi bottle (whipped cream bottle) using a piping bag, close it and fill it with two N2O bombs.

Place the filled bottle in the refrigerator for 30 minutes. After removing the bottle from the fridge, shake the bottle well and serve the espuma. Serve immediately. Have a good taste.
