1.5 litres broth 30 g lard 40 g plain flour 2 dl sour cream 70 g eidam 200 g small gnocchi to taste salt

1. Bring the broth to the boil, season with salt and thicken with the roux made from the lard and flour, simmer for 20 minutes and strain. Then add the sour cream and grated cheese. 2. Put the small gnocchi in the centre of the plate, pour the hot soup over them.
