Eggs in spicy sauce – Anda Masala

1 dl oil/butter 5 pcs hard boiled egg 2 tsp ground turmeric 1 tsp chilli pepper 1/2 tsp salt 2 tsp whole Roman cumin 1 tsp garlic paste 1 tsp ginger paste 1 tsp ground coriander 1 pcs sliced canned tomatoes 1,5 dl hot water 1 tbsp ground oats 1 tsp garam masala 1 tsp kasuri methi – fenugreek (dried leaves) 1 tbsp fresh coriander 2 pcs white onion cut into small cubes

In our area, unconventionally prepared eggs as a vegetarian dish. Hard boiled eggs in a sauce of tomatoes and fried onions with balanced flavours. It is a wonderful addition to the diet of not only vegetarians. Most commonly served with naan bread and roti. Ingredients and spices can be found at www.indickekorenie.sk

Place the eggs in a bowl and add 1 tsp turmeric powder, 0.5 tsp chilli powder and 0.5 tsp salt. Coat the eggs in this mixture and fry in oil until golden brown. Set aside.

In the same pan for 30 sec. Roast the whole romaine, add the onion and roast for 4-5 min. Then add the garlic and ginger paste and roast together for 1 min. Then add the remaining turmeric, ground Roman cumin, ground coriander and remaining chilli and roast it all like this for 30 sec.

Add the tomatoes, stir and cook the masala prepared in this way for 3-4 min. under cover. Uncover and thicken with crushed oatmeal. Pour in the water mix well and add the eggs. Cover and cook for 2 – 3 min.

Cover and add kasuri methi, garam masala and fresh chopped coriander. Cover one last time and simmer on lowest flame for 1 min. The dish is ready. Enjoy. The spices for this dish can be found at www.indickekorenie.sk.
