Eggs in avocado, pineapple in butter and coriander sauce,

2 pcs ripe avocado 4 pcs eggs 20 g butter 1 handful pineapple cut into small pieces 1 bunch fresh coriander 1 clove garlic 1/2 pcs chilli pepper 140 g white yoghurt 1/2 pcs lime 1 tbsp extra virgin olive oil ground black pepper salt

My favorite breakfast. Protein cut with healthy fats, complemented by the fruity taste of butter and a fresh herb dip.

Cut the avocado carefully lengthwise and remove the pit. Use a spoon to scoop out a piece of the inside from where the pit was and set it aside. Depending on the size of the avocado and egg, consider whether there is enough room for the whole egg or separate the yolk from the white and add them to the inside of the avocado in stages. Line a baking tray with baking paper, place the prepared green pieces inside and sprinkle them lightly with salt and black pepper. Place them in a preheated oven at 180 °C for 20 minutes.

Pineapple butter is easy to make – melt 20g of butter in a frying pan, then pour it into a blender and add a few cubes of pineapple. Blend it and put it back in the fridge to harden again.

The only thing missing to make the perfect combination is a fresh coriander sauce. Simply blend all the other ingredients – coriander, garlic, paprika, yoghurt, lime juice, olive oil and the rest of the hollowed-out avocado. Season with salt and pepper.

Serve with fresh bread or crispy corn tortillas, not forgetting to spread with fruit butter. Pour the green sauce over the avocado. Instagram: walrus.buko
