Eggplants with peppers and tomatoes

Recipe from Greece for roasted aubergines served with peppers and tomatoes, topped with yoghurt.
Ingredients:
Procedure:
1. Sliced eggplants, cleaned and sliced peppers, steamed, peeled and sliced tomatoes, salt and pepper
2. First fry the sliced aubergines in hot oil, remove them and arrange them on a heated plate under the dripping
3. Then fry the peppers, arrange them on the fried aubergines and pour the yoghurt over them
4. Finally, roast the tomatoes, pile them on top of the yogurt and serve immediately.
