Eggplants with cheese baked pizza style recipe

Eggplants are a vegetable commonly consumed in Spain whose use in the kitchen is most versatile, they are like a vegetable meat with which you can prepare a multitude of recipes like these eggplants with cheese and tomato, an alternative pizza version that you can prepare with the same ingredients of your favorite pizza.
Nutritional properties of eggplants
According to the Spanish Nutrition Foundation “Its energy and nutritional value is small compared to that of other Vegetable Recipes, being water the major component in its weight. It is of medium fibrous content, but more localized in skin and seeds.
The skin of the eggplant contains an anthocyanin, nasunin, with antioxidant action.
In addition, the eggplant contains a certain amount of a toxic alkaloid called solanine, which appears much more in the green parts of the plant and in unripe fruits. Solanine disappears with heat, so a ripe eggplant that is well prepared and cooked does not pose the slightest risk.”
It is precisely its high water content and small energy value that makes eggplants a food recommended in weight control and weight loss diets.
How to make baked eggplants with cheese
Ingredients
. Eggplants, 2 medium Eggplants, 2 medium Tomato sauce, sufficient quantity Grated cheese for melting, sufficient quantity Oregano Salt Extra virgin olive oil
Step 1

We heat the oven to 180ºC.
Cut the eggplants lengthwise into slices at least one centimeter thick, salt them on both sides and let them rest for about ten minutes to release the vegetation water.
After this time, dry each slice well with absorbent kitchen paper.
Line the baking tray with baking paper and place the eggplant slices on it, previously brushed with olive oil.
Bake for 10 minutes at 180ºC, turn them over and bake for another 10 minutes.

Remove the eggplants from the oven, where we raise the temperature to 200ºC.
We cover the eggplant slices with tomato sauce, grated cheese and oregano. Optionally you can add other ingredients such as ham, tuna, bacon, onion, mushrooms or those that take our favorite pizza.

Put the tray back in the oven and bake for 5 more minutes at 200ºC until the cheese is melted.

Eggplants with cheese are served immediately and are perfect for dinner or as a first course at lunchtime. It’s also a vegetable recipe that the little ones tend to love.
Okay, it’s not the same as a pizza, but it saves you kneading, putting the kitchen lost of flour and a few calories. Best of all, when you try it, you can’t believe how good it is and you forget all the pizzas.
