Eggplants Stuffed with Chicken
Simmered eggplants with chicken, baked in the oven.
Ingredients:
Procedure:
1. Cut rinsed eggplants in half lengthwise and boil in salted water for 10 minutes
2. Take them out, scoop out the flesh and finely chop some of them
3. Fry the finely chopped onion in melted butter, add the cooked, peeled and finely chopped tomato, finely chopped chicken and the flesh of the aubergines
4. Fill the eggplants with the prepared mixture and bake in a moderately heated oven
6. Sprinkle with chopped parsley and serve.
