Eggplant with cheese au gratin

Ingredients:
4 eggplants 120 g grated Parmesan cheese 60 g breadcrumbs Basil Chilli Parsley Olive oil Salt and pepper
Preparation :
Wash the eggplants and cut them into slices about half a centimeter thick.
Layer a large baking sheet with paper and preheat the static oven to 180°.
Put some washed and dried basil leaves, grated parmesan, breadcrumbs, chili and pepper in a blender, then blend for a few seconds.
With a brush, oil the baking paper and sprinkle lightly with salt, then arrange the eggplant slices on it, one next to the other.
Badge each slice with oil and cover them with an even layer of breadcrumbs.
Drizzle with oil then place in the lower part of the oven.
Bake for about 20 minutes at 180° until the eggplants are golden brown.
Put a little chopped fresh parsley on the surface to decorate.Cheese eggplants au gratin are ready to be served.
