Eggplant rolls with provolone cheese

Another tip for a luxurious festive treat. Prepare your diners a tasty warm overdose of grilled eggplants baked in the oven in the form of rolls filled with provolone dolce, cherry tomatoes and basil.

Ingredients:

2 pcs medium sized aubergines 200 g extra virgin olive oil cherry tomatoes basil pepper salt toothpicks

Post:

  • First, slice the eggplants into not too thick slices, salt these, let them rest for 30 minutes called.
  • Grill the aubergines
  • Wash the tomatoes and cut them into quarters. Cut the provolone into thin slices.
  • Place the aubergines on a cutting board or on a plate and place the slices of provolone, sliced tomatoes, salt, pepper, chopped basil and drizzle with olive oil. Twist the aubergines into rolls and secure with a toothpick, place in a baking dish lightly greased with oil.
  • Bake in the oven at 180°C for 5 minutes until the cheese melts.
