Omelette served with sharply fried chicken liver.

Procedure:
1. Rinse the liver, blanch and cut into cubes
2. Dice the peeled onion
3. Fry the onion in hot oil, add the chicken liver and fry it hot
4. Cover the liver with beaten eggs with salt and pepper and fry until the eggs are stiff
5. Serve the omelette folded in half, serve with fresh bread or boiled potatoes.
