How to make rice with lobster

Ingredients

. Arroz Brillante Sabroz rice, 400 g Lobsters, 2 of 400-500 g each Onion, 1 Garlic cloves, 2 Fish stock, 2 liters Toasted almonds, 10 Saffron, 1 teaspoon Romesco sauce (or tomato sauce), 2 tablespoons Parsley Olive oil Salt

Step 1

To prepare the lobster, cut it by separating the head, claws and tail. Remove the coral and juices from the head, and open the tail and head in the middle. Set aside.

Step 2

In a bowl, prepare the saffron mince by crushing the saffron threads, almonds, parsley and lobster coral into a paste. Set aside.

Step 3

In a frying pan, brown the lobster pieces with a touch of salt. Set aside.

Step 4

Chop the onion and garlic very finely and brown them with a little olive oil in the same pan in which we cooked the lobster.

Step 5

Add the 400 grams of Brillante Sabroz and the romesco sauce and sauté everything together. Add the hot fish fumet and let it boil for 10 minutes.

Step 6

Add the lobster to the pot and then the saffron mince that we had reserved.

Step 7

Correct salt, remove and let stand 3 minutes before serving the rice with lobster.
