These days in Spain, between confinements forced by the difficulties in containing the coronavirus and the low temperatures that Filomena is giving us, I can’t think of anything better than to get down to work and start -again- to prepare cakes.
And since the idea is to bake a delicious juicy cake using whatever we have at home, I’m going to give you a series of little tricks that allow us to do a good job if we do not have at hand any ingredient that the recipe asks for.
We start from the premise that a cake usually takes 5 ingredients that are almost never missing, and they are flour, sugar, eggs, oil and baking powder (also known as chemical yeast or Royal Yeast).
If we do not have chemical yeast, we can substitute a tablespoon of this yeast for a tablespoon of baking soda and half a tablespoon of vinegar or lemon juice.
The oil can be replaced by butter or even by a nut cream, such as peanut butter.
If what we are missing are the eggs, there are several options to substitute eggs in baking recipes.
When it comes to sugar we can use a mixture of different types of sugars, honey, agave syrup -adjusting the amounts since syrup is sweeter- . You can also use a sweetener, but in that case you must make sure that it is suitable for baking, as some become bitter when subjected to high temperatures.
Finally, the flour, which might seem that if we have run out of flour all is lost and we will have to stay without cake, but it is not so. We can replace it with ground almonds, ground coconut -adding more liquid to the dough, since it absorbs a large amount of liquid- , if we only need a small part because the one we have does not reach us we can use potato starch or cornstarch.
In this recipe today, and write it down because it is a great trick, instead of flour we have made our cake with crushed Maria cookies and the result is a wonder that someday you have to try.
Other common ingredients such as cream, can also be replaced easily.
How to make a juicy sponge cake when you’ve run out of flour
The perfect occasion to get rid of that packet of bland cookies that have been hanging around the pantry for weeks.
Ingredients
For a 25 cm rectangular mold
. Crushed Maria cookies, 300 g Chopped chocolate, 125 g Butter, 150 g Eggs L, 5 Sugar, 120 g Impeller, 3 teaspoons
Step 1
Preheat the oven to 180 ºC and line a rectangular mold with baking paper.
Step 2
In a bowl, beat the butter with the sugar until the mixture has a creamy texture. Add the eggs and integrate them into the mixture one by one.
Step 3
Add the crushed cookies and yeast and continue beating until you get a thick porridge (it is quite dense).
Step 4
Pour in the chopped chocolate, mixing with a spatula. Place the mixture in the mold and level it.
Step 5
Introduce in the preheated oven at 180 ºC and bake for about 40 minutes (until a skewer comes out clean).
Step 6
Remove from the oven, unmold and let cool on a wire rack.
