Ingredients ( 10 Servings )
– 150 g small spelt flour 150
– 200 g wheat flour T150
– 50 g oat bran
– 50 g rye flour T150 or hulled barley flour
– 50 g gluten
– 2 tbsp. tablespoons sesame
– 2 tablespoons brown flaxseed
– 2 tablespoons pumpkin seeds
– 1 tablespoon. fructose or agave syrup
– 2 packets dehydrated baker’s yeast
– 350 grams water
– 1 level teaspoon salt
– 1 tbsp. tablespoon olive oil
– at discretion sunflower seeds, to sprinkle on bread
Preparation
Put water and yeast /37°C/2min/vit2
Add oil, agave syrup, flours, oat bran, gluten, seeds and salt, /5min
Lightly oil and flour a pan. At the buzzer, 10sec /vit 2 to loosen the dough.
Make a dough and put it in the mold, let it grow 30 min in the warm (in the oven at a temperature of 35 °-40 ° C)
Put a ramekin of water in the oven and cook 20 min at 220 ° C, after 20 min cover with a sheet of aluminum foil so that it is not too toasted the top and let cook another 15 min
Cool on a grid and cut after cooling.
