Easy Crock Pot Santa Fe Chicken Recipe
Last Updated on
Here’s a delicious chicken recipe using just five ingredients. Tex-Mex flavors distinguish this tasty dish, and the baking pot makes it very easy. Make the chicken lightly with Mexican-style rice and serve it with warm tortillas or cornmeal. This recipe can easily be scaled up or down.
What you’ll need
1 can (15 oz) black beans (dried and rinsed) 2 cans (12 to 15 oz each) whole kernels (dehydrated) 1 cup bottled thick and spicy salsa or Pace Picante'i box, divided into 5 or 6 boneless, skinless chicken breast halves (about 2 pounds) 1 cup shredded cheddar cheese
How to Make It
In a 3 1/2- to 5-quart slow cooker combine black beans, corn and 1/2 cup salsa. Lift chicken breasts up and then pour remaining 1/2 cup salsa over chicken. Cover and cook on high for 2 1/2 to 3 hours or until chicken is tender and white throughout. Don’t overcook or dry the chicken. Sprinkle cheese over chicken; cover and bake until cheese melts, about 5 to 15 minutes longer.
Tips and Variations
Whether you add certain ingredients or change the recipe, you can make changes while maintaining the integrity of the skin. Consider any of these variations and tips:
Substitute boneless chicken breasts for chicken breasts. Chop the onion and add it to a slow cooker with beans and corn. Rinse the cheese or use a Cheddar Jack or Mexican blend, or use pepper or taco-flavored cheese. Another way to serve this dish is to shred or crumble the chicken after it is cooked and place it on soft tortillas with the salsa mixture. If desired, finely chop the cheese and sour cream. Avoid preparing chicken breast for much longer than the recommended time. Chicken breasts are very lean, so tend to be dried out when cooked. If you need to marinate it longer, try a recipe for boneless chicken thighs.
