Easy Baked baby artichoke and carrots recipe
Ingredients:
1 pound baby carrots, peeled
1/2 pound baby artichokes, trimmed
1/4 cup olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Instructions:
Preheat oven to 400 degrees F.
In a large bowl, toss together carrots, artichokes, olive oil, salt and pepper.
Spread the mixture onto a baking sheet and roast for 20-25 minutes, stirring once or twice, until the vegetables are tender and lightly browned.
