Smigru-what? If you haven’t heard of the Easter soup šmigrustovka, believe me, you will remember it for next time. This unusual soup gets its name from the word šmigrust, as Easter is called in some parts of Moravia. According to many, it includes whatever you track down, plays with all the colours on your plate and is said to work wonders if carols make your stomach upset. Ingredients:
Rule for 4 servings:
300 g
of smoked meat
4 pcs
hard boiled egg
1 pcs
spicy sausage
1 pc
larger onion
1 pc
yolk
1 l
water
2 tbsp
smooth flour
1 tsp
sweet ground pepper
grated horseradish
chives
pepper
salt
Procedure:
In 1 litre of water, boil the smoked meat and sausage with the peeled onion.
Remove the meat and sausage and cut them into cubes. Divide them among four plates and add the halved boiled egg to each.
Sieve the broth and then bring to the boil. Gradually whisk in the cream mixed with flour and ground paprika.
Stop, add the yolk and season with salt and pepper.
Divide the reserved broth into plates and garnish with grated horseradish and chives.
