And when else but just before Easter to try slow roasted rabbit on wine with Carlsbad dumplings with nettles. You can find fresh, unvacuumed rabbit meat from a regular Czech supplier, e.g. in Globus hypermarkets.
Ingredients:
Range for 4 servings:
For the roast you will need:

of rabbit legs
3 pcs
middle onions
5 pcs
juniper bulbs
3 pcs
new spice bulbs
1 handful
of chopped fresh herbs (e.g. sage, thyme, rosemary)
200 ml
white wine
2 tbsp
of clarified butter
2 tsp
of Dijon mustard
2 tsp
of Dijon mustard
juice of ½ lemon
freshly ground pepper
salt
For the dumplings you will need:
2 pcs
mushrooms

eggs
5 tablespoons
of coarse flour
2 tablespoons
of clarified butter
250 ml
milk
1 handful
chopped nettles (or parsley)
pinch of nutmeg
salt
Procedure:
Dress the rabbit legs with Dijon mustard, salt and pepper. Melt the clarified butter in a frying pan and fry the finely chopped onion until golden brown. Add the finely chopped herbs to it.
Place the thighs in the baking dish provided for the oven and sprinkle them with the onions and herbs. Finally, add the juniper, allspice and lemon juice. Initially bake for about 30 minutes at 175 degrees, then baste with some of the wine and bake for a further 120 minutes at 140 degrees. Baste continuously with the remaining wine or broth or water.
While baking, prepare the Carlsbad dumpling. Dice the mushroom and fry it until golden brown in a frying pan in clarified butter (let it cool down). In a bowl, mix the egg yolks, milk, nutmeg, nettles and flour. Add the browned breadcrumbs and mix (let soak). In a second bowl, whisk the egg whites with a pinch of salt. Finally, stir everything lightly and add more salt to taste.
Shape the hot dough into a roll in food foil, wrap the dumpling in it and tighten the edges (this amount makes 2 dumplings). Steam for 20 – 25 minutes.
Let the dumplings cool slightly and slice with a sharp knife. Serve with the roasted rabbit.
Recommendation:
Rabbit meat is very tender, tasty, dietary and offers a variety of adaptations. If you plan on losing weight by swimming, then sauté it in onions and only lightly season with salt, pepper, crushed cumin and garlic. You can complement the plate with boiled potatoes and perhaps steamed spinach, carrots or kale. However, it also makes a very good roast – on mushrooms, root Vegetable Recipes, French-style with Dijon mustard.
