Healthy version of potato salad for the little tidbits.
1. Prepare the ingredients in the classic way – boil the potatoes in their skins in lightly salted water for about 20 minutes or until they are soft. Peel the carrots and boil them in water until soft. Hard boil the eggs. Cook frozen peas in water for 5 minutes. 2. Clean the potatoes and cut them into small cubes. Drizzle with olive oil and add lemon juice to taste. Toss. 3. Add the diced eggs, carrots and peas. Mix. 4. Add the white yoghurt and mix again. 5. Let stand to let the flavors combine and serve.
