Easter Baba

In addition to spiritual food, Easter also includes traditional food, and this tends to be plentiful. On Saturdays we make Easter baba, or we call it “zasekávka”, as the main dish, and it wouldn’t be Easter in our country without it.

Boil the smoked meat for about 3/4 hours, take it out of the water (which we keep, we will need it), let the meat cool down.

Then cut the meat into cubes, cut the sausage into rounds and the bacon into small noodle pieces. Tear the white bread into pieces and cover with the water from the smoked meat.

In a larger bowl, beat the eggs, if you want to have a fluffy baba so whisk only the egg yolks, then add the egg whites at the end. Put the egg mixture into the slightly floured pastry, the diced smoked meat, the sausage cut into rounds, the bacon cut into slices, mix lightly and then add salt to taste, add about 1 teaspoon of ground black pepper and a handful of chopped fresh parsley.

Stir everything together and pour the mixture into a greased (preferably with homemade lard) deep baking tray.

Bake in the oven for about 55 minutes. Bake at 180°C for the first 30 minutes and bake at 200°C for the remaining 30 minutes.

After baking, slice and serve with bread, sour pickles, beetroot, or homemade horseradish.
