Doughnut (Donuts) – fried

The famous American donuts are either baked or fried in oil. This recipe is for fried doughnuts decorated with maple, chocolate or sugar glaze.

Procedure:
1. Pour the milk into a saucepan and heat to a temperature that will dissolve both fats in it, set aside
2. Prepare the sourdough starter; mix the dried yeast with warm water in a bowl and leave in a warm place for about 5 minutes, the starter should start to foam
3. Put the foamed yeast in a large bowl and pour in the milk and fat (make sure it is only lukewarm, otherwise the dough will not rise)
4. Add the egg, sugar, salt, nutmeg and half the flour, beat all the ingredients on low speed until the flour is incorporated, then increase the speed to medium and beat the mixture until all the ingredients are fully mixed
5. Add the rest of the flour and mix on low speed first, then increase the speed again and whisk everything thoroughly
6. Knead the dough until smooth and non-sticky, then transfer it to a greased bowl, cover with a clean cloth and leave it to rise in a warm place for 1 hour, or until the dough has doubled in volume
7. On a well floured rolling pin, roll out the dough to a thickness of 1-1,5 cm high, cut out the doughnuts with a round cutter about 7 cm in diameter and cut holes in the middle about 2 cm in diameter
8. Heat the oil in a deep fryer to 185 °C, fry the doughnuts for about 1 minute on each side until golden brown
