Domažlice Pork Ragout

Simplified cubes of pork shoulder served with sauce enriched with peas, cucumber and egg.

Ingredients:

500 g of pork shoulder 150 g of sterilised peas 2 pcs of/td>

sweet and sour cucumbers 2 pcs hard boiled eggs 1 pc onions pork or beef broth red ground pepper smooth flour cream lard salt

Procedure:

  • Cube the meat, season with salt
  • Fry the finely chopped onion in the lard, add the meat, fry, sprinkle with paprika, pour in the stock or water, simmer until the meat is tender
  • .Mix the plain flour with the cream, pour over the soft meat and cook over a low heat
  • Finally add the diced cucumber and peas
  • Serve with dumplings or rice, add pieces of boiled eggs to the sauce on the plate.
