Divine chocolate soufflé
ingredients
2 tbsp butter 2 tbsp plain flour 300 ml whole milk 1 packet vanilla sugar 100 g dark chocolate 2 pk egg yolk 2 pk egg white 4 tbsp granulated sugar a little butter and kr. sugar to grease and line the bowls

Simple goodness made with chocolate, sugar, eggs and milk – almost no flour.

Grease a small baking dish with butter and dust with icing sugar.

Melt the butter in a saucepan, add the flour and cook the roux, thinning it progressively with milk.

Add the vanilla sugar and cook the semi-thick cream.

Pour the cream over the broken chocolate and whisk to form a semi-thick mixture into which (when it has cooled a little) stir in the egg yolks.

Beat the egg whites and sugar into stiff, glossy whipped cream and fold it into the chocolate mixture very lightly (to leave as much air as possible).

Distribute the batter between 3 to 4 pans and bake in a preheated oven at 200°C for about 18 to 20 minutes.

Serve while still warm, directly in the bowls dusted with icing sugar or with a scoop of vanilla ice cream or a spoonful of freshly whipped whipped cream.
