Dill risotto for children and not only for them

Risotto is a dish that is such a sure thing for a mother with a young baby. Thus, our Linda has been eating risotto since she was one year old. I prepare it without wine and spices so as not to irritate the baby’s tummy. I leave the rice classic arborio white, natural or basmati, or jasmine rice she eats enough in other dishes. That’s just on a side note, if such white is suitable for a baby. Risotto is a hearty meal, in addition to its great taste and hundreds of possible combinations. This time, I chose a combination of ingredients without Parmesan cheese and butter because they were out of stock and I didn’t have time to run to the store before making lunch. Instead, I had mascarpone. So I used it. With dill. To my surprise, that was the first herb Linda ate in the meal and saw it . The dill tasted good. And that’s good because it has a lot of positive effects. In addition to migraine suppression and detoxifying effects (in larger quantities), it also stimulates the appetite. Many of you must have thought of the dill milk sauce that grandmothers used to make with boiled beef and potatoes, right?

Fry finely chopped shallots in oil. Add the rice and reheat dry by stirring. Pour in water so that the water is about 2:1 to the rice.

If the water has evaporated and the rice is not yet tender, add hot water. That is, water if you don’t have broth. The broth can be from soup, meat or fish or vegetable broth. If cooking risotto for children, the rice is cooked until soft, not “al dente”.

Finally, add the zucchini and mascarpone with a little nutmeg salt. You don’t even need to add salt. I give a pinch. Remove from the heat and stir in the chopped dill. Stir to cool to a suitable temperature for baby tummies while the risotto soaks up the dill flavour

TIP: For children, chop only the dill sprigs not the stem so they don’t mind.
