Australian Lamb Chop

Recipe from the Australian episode of “Prostřeno” for lamb stew, which Australians consume in large quantities.
Ingredients:
Procedure:
1. In a large pot, fry the lamb cubes in hot oil until nicely browned
2. Add the peeled onion cut into half rounds, crushed garlic, bay leaves, sprig of thyme, whole cinnamon, cumin, peppercorns and de-peeled, chopped chillies, cook for about 5 minutes, stirring constantly
3. At this stage, add the lemon zest, tomato paste and wine, simmer for a while, then add the stock and drained artichokes, bring the mixture to the boil again
4. Place the pot in an oven preheated to 160 °C and let it simmer for 2 hours, stirring occasionally.
