Dessert cream with caramel

A delicious chilled dessert decorated with fresh strawberries and chopped pistachios.

Procedure:
1. Add the inside of a cut and scraped vanilla pod to the pot of milk and cream
2. Add the cinnamon and orange zest, bring to a boil, then strain the cooked base
3. Beat about 80 g of sugar, eggs and egg yolks until stiff and mix with the strained cream base
4. Place the bowl in a hot water bath and whisk the contents into a thick cream
5. Boil the caramel from 100 g of sugar and 100 ml of water
6. Pour the caramel into individual glasses, top with the cream and chill
7. Decorate the cooled dessert with fresh strawberries, sprinkle with chopped pistachios.
Note:
Water bath – Place the container with the dish in a pot half filled with hot water, keeping it just below boiling point.
