Demikát – brynzová soup II.

Soup of bryndza, whipped cream, spices, potatoes and other ingredients, served with croutons.
Ingredients:
Procedure:
1. Peel and dice the potatoes
2. In a saucepan, fry peeled finely chopped onions in some of the hot fat, add most of the chopped potatoes (set the rest aside), cumin, bay leaf and sauté everything for a while, then dust with ground paprika, fry briefly and pour in the broth
3. Tie the allspice and black peppercorns and peeled garlic cloves in cheesecloth, add to the soup base and cook until the potatoes are soft
4. Then remove the spices and garlic, blend the base with a stick blender, add the bryndza mixed in whipped cream and sour cream, season with salt if necessary and boil briefly, finally add the remaining potatoes fried in a pan on the remaining heated lard
5. For the croutons, bake the rolls cut into cubes until golden brown in an oven heated to 180 °C and serve with the soup.
