This time we did something different and special. We decided to make Mexican-style tacos, with Estonian cold-smoked glass sausage. Why tacos and glass sauce? It’s because it’s always interesting and exciting to combine the food culture and flavours of two different countries. The result is always exciting, and there’s always a little element of surprise as to whether or not it’s a good match.
M.V.Wool has just such a product as slices of cold-smoked glass bean in oil. It is a very tasty and special food. To confirm this, this product was declared the best food product in Estonia 2018, and was also awarded the silver medal for the best fish product in Estonia 2018. The jury of the competition highlighted the exceptionally delicate taste of the rare fish and the fact that M.V.Wool had introduced a completely new species of fish to Estonian supermarkets. The fillet is pinkish-white with juicy flesh, light and delicate flavour. In addition, the fillet is bone-in. The ideal fish to prepare whatever your heart desires. Our souls were longing to make some appetizing and delicious tacos.
Making tacos is not complicated at all, the main tip is to use colours. The more colourful the better. If you use cabbage, always use red. Same with onions, that’s why we decided to use red onions. The avocado added a touch of exoticism and the chilli added a sharpness. We ended up with interesting tacos with different colours and flavours, which tasted very interesting and most importantly, very tasty.
