Delicious muffins with sour cucumbers

1 cup plain flour 1 cup semolina flour or semolina 1 tbsp baking powder 1/2 tbsp lemon zest 1 tbsp salt 1 tbsp ground black pepper 1/2 cup carrots (cubes) 1/2 cup pickled cucumbers (cubes) 1 cup Mascarpone 1/2 cup oil 3 pcs egg 1 white yoghurt
For garnish
1/2 cup Mascarpone 1/2 cup sour cream sesame seeds, carrots, pickles

We love the cookies mixed in one bowl. And these unconventional muffins with carrots, pickles and mascarpone are definitely one of them.

In a large bowl, combine and mix the dry ingredients: both flours, baking powder, lemon zest, salt and pepper.

Then add the diced carrots and pickles.

Next, add the liquid ingredients: mascarpone, oil, beaten eggs and yogurt.

Mix everything together to form a batter, which is layered into muffin cups and baked in a preheated oven at 180°C for about 25 minutes.

While the muffins are cooling after baking, prepare the cream for decorating with mascarpone and sour cream. Fill a pastry bag with it and decorate each muffin with a layer of cream.
6.
Finally decorate with black sesame seeds, carrot and sour cucumber rounds.
