Do you know Jerusalem artichokes? Jerusalem artichoke or sunflower is a tall herb with beautiful yellow flowers, hiding under the ground a real treasure in the form of precious tubers, which have a beneficial effect on the human body. Jerusalem artichoke is naturally gluten-free and suitable for diabetics as it contains precious inulin, which regulates blood sugar levels and lowers the glycaemic index of foods. In addition, this superfood acts as an effective prebiotic and aids digestion. Fry the chopped spring onions in butter, add the cleaned and chopped Jerusalem artichokes, and saute together for a few minutes. Pour in the stock, season with salt and pepper and simmer for about 20 minutes.

Remove from the heat and blend the soup thoroughly with a stick blender. Thin the consistency with broth as needed, or thicken with brine or kuzu. Garnish with chives and dried grated Jerusalem artichokes. Yummy!
