Delicious apple pie with pears
ingredients
4 pcs apples 2 pcs pears 3 pcs eggs 150 g of sugar 130 g of plain flour or coconut flour 1 tbsp baking powder 1 tbsp vanilla sugar 1 tbsp cinnamon 2 tbsp raisins 1 tbsp rum

Family recipe for a quick and delicious autumn cake made with home-grown autumn apples and pears, made by each of our generation 🙂

First, prepare the fruit. Peel the apples and pears. Cut 2 pears and 3 apples into small cubes and cut 1 apple into marigolds

Separate the egg whites and yolks from the eggs. Whisk the egg whites into a foam. Beat the egg yolks with the sugar, vanilla sugar, baking powder and cinnamon.

Gradually add the foamed egg whites and flour. Either plain flour or coconut flour can be used. Alternatively half and half. Beat gently and carefully to a foam-like batter.

Then add the diced pears and apples, dried raisins and rum to the batter. Mix gently.

Prepare the cake tin. Line the bottom with paper and pour the batter into the tin. I use a larger mould.

Pile the apple that we cut into crescents on top. And bake in a preheated oven at about 170 degrees for about 40 minutes.

Remove from the oven and let rest for 10 minutes. Then run a paring knife around the edges to remove the dough from the tin and then open the tin and remove the cake.

The cake is delicious, fluffy, soft and not dry at all 🙂 Enjoy 🙂
