Delicate cheesecakes

ingredients
600 g plain flour 100 g semi-coarse flour 150 g granulated sugar 50 g butter 1/2 dl vegetable oil 3 tbsp honey 3 tbsp lemon juice 3 dl milk 21 g fresh yeast 1 KL salt 1 packet vanilla sugar
Filling:
750 g Cottage cheese soft creamy zest of one lemon 2 dl caster sugar 1 packet vanilla sugar 1 pk yolk 2 tbsp vanilla pudding powder to taste raisins
For spreading:
1 egg white

Fine, soft yeast cakes, filled with a delicious cheesecake filling. I believe the whole family will enjoy them 😉

In one bowl, first mix both flours, sugar, salt and vanilla sugar with a spoon. Then add the oil, soft butter, honey, lemon juice and yeast soaked in 2 dl of milk. Add the remaining approx. 1 dl of milk as you work the dough. Actually, as needed, I added about 1 dl more, but it always depends on the flour, so you always need to add a little 🙂 Work up from semi-soft to a slightly softer, pliable dough that separates from the bowl. Finally, using a little flour, knead it briefly into a loaf, dust the top with flour and leave to rise for about 45 minutes to approximately double its volume

While the dough is rising, mix all the ingredients for the filling. Everyone can add sugar to taste, I used 2 dl. The custard powder is put in so that the juice that is created during the baking will harden and not run out. The lemon zest adds a fantastic flavour to the filling, I use it quite often 🙂

Turn the risen dough out onto a floured board and roll it out into a large rectangle about 5-6 mm thick. Cut it into 12 equal parts. Then place a generous amount of filling in the centre of each pastry. You need to divide the filling from the mesh so that you have the same filling everywhere. I personally always put quite a lot of filling in my cakes, that’s the way we like it. Finally, close the pies by always joining 2 opposing spikes, pressing them well together to make those little pouches/plates

Place the cakes on a baking tray lined with baking paper and brush with egg white. Finally, put the baking tray in the oven, which you have already preheated to 180°C for about 35 minutes. Just to be sure, though, keep an eye on it, as every oven bakes a little differently

While still slightly warm, sprinkle them with icing sugar. Enjoy!
