Deep Fried Chicken Croquettes Recipe

Chicken croquette is made with chicken, chopped onion and parsley, with a thick white sauce to bind the ingredients. The croquettes are poured into the breadcrumbs and then stuffed while still baked.
Croquettes have long been a favorite and delicious way to use chicken or turkey. They can also be made with leftover ham.
If you’re working in batches or would like to make chicken croquettes for 20 minutes, place the dried croquettes in a rack pan and place in a preheated 200 F oven.
What you’ll need
3 tablespoons butter 1/3 cup flour 1 teaspoon salt 1 cup milk 2 cups finely chopped cooked chicken 1 tablespoon chopped onion 2 tablespoons chopped parsley 2 eggs 2 tablespoons lemon juice 1/3 cup decent dry breadcrumbs, unchopped
How to make it
In a saucepan, melt the butter; stir in the flour and salt and cook, stirring, for 1 minute. Add milk gradually, stirring. Cook over low heat, stirring constantly, until thickened. Add chicken, onion and parsley; baste in greased shallow pan and cool thoroughly. Whisk eggs and lemon juice together. Shape cooled chicken mixture into 8 logs; dip each in egg mixture, then cover with cups. Heat deep fat to 365 F. When oil comes to a boil, fry croquettes about 5 minutes in each butter until golden brown. Do not overcook them. Depending on the pan you are using, you can prick the croquettes in two batches. Empty the paper towels.
