2 kg chicken carcasses 3 pcs chicken wings 1/2 pcs spiced onion with cloves and bay leaves 1 pcs garlic cloves 200 g celery 100 g leek 150 g carrots 10 pcs whole pepper 1 tbsp tomato puree 300 ml dry white wine 3 sprigs parsley 1 sprig thyme 1 sprig celery sprig 2 sage leaves
procedure
1. Chop the carrots and wings and roast at 250°C. Add onion, garlic, Vegetable Recipes, spices and let brown. Also fry the puree, pour wine over it and reduce the broth until it gets the desired colour. 2. Pour the water over the contents of the baking dish. Dissolve the fat in the water, pour it all into the saucepan and bring to the boil. Put the herbs in the pot and let it cook for 2-3 hours. Then strain the broth.
