Dandelion Salad with Egg

In spring there is no shortage of young dandelion leaves. Pick them and prepare a tasty and fresh salad served with boiled eggs.

Ingredients:

3 handfuls of fresh young dandelion leaves 4 pieces hard-boiled eggs 2 pcs of small potatoes 1 pcs of onions 1 pcs of dandelion/td> 2 tablespoons apple cider vinegar 2 tablespoons olive oil 2 tablespoons olive oil

/td> pepper salt

Procedure:

1. Boil the potatoes in salted water, peel them and cut them into thin slices while still hot
2. Mix all the ingredients and prepare a dressing of salt, pepper, apple cider vinegar and olive oil.

Recommendation:

In spring there is no shortage of young dandelion leaves. This recipe is an ideal light healthy dinner, but you can also prepare it as a snack or side dish for other meals.
