2 tbsp herb oil 1 tbsp olive oil 1 pk onion 1 pk carrot 200 g chicken 1 liter mushroom broth 2 pk potato pk black pepper 1 clove garlic pk fresh parsley

Excellent mushroom – chanterelle mushroom soup.
1.
In a deeper saucepan, heat both types of oil.

Add finely chopped onions and sauté until they are glassy.
3.
Add the sliced carrots and stir together.
4.
Add the cleaned mushrooms, you can even chop them depending on the size.
5.
Stir fry the mushrooms together so they don’t release water.
6.
Spoon the broth over them.
7.
Add the diced potatoes and season with pepper.
8.
Bring to the boil and cook under a lid on a low heat for 15 minutes (or until the Vegetable Recipes are soft).
9.
Before bringing to the boil, add the crushed garlic and chopped parsley and stir.
10.
Serve.
