3 litres fresh redcurrants 1 kg crystal sugar 1 packet Gelfix

Fantastic jam that is easy to prepare. Suitable for baking with its savoury flavour. Even beginners can handle it.

Wash the currants thoroughly and let them drain. Put them in a large bowl and sprinkle with granulated sugar. Place in the fridge overnight to set.

Next, bring to the boil to cook the currants. It doesn’t take long, about 25-30 minutes. Strain into a second bowl.

Pass the strained currants through the boil again add the Gelfix1:1 simmer and add the sugar according to the instructions let it come through the boil.

Take a little on a plate to test for thickening.

While still hot, fill prepared jars, close, turn lid upside down see photo, leave inverted for about 10 minutes. Turn back over and cover with a tea towel, leave to cool. Enjoy.
