Currant cake with snow

400 g semi-coarse flour 120 g granulated sugar 4 pcs egg yolks (leave the whites for decorating) 120 g butter (hera) 1 packet baking powder 200 ml lukewarm milk 1 packet vanilla sugar
On top:
700 g redcurrants 4 egg whites 200 g icing sugar salt

Currants are my favourite fruit. They were harvested in the garden, so I baked a very tasty cake.

Beat the butter, egg yolks, sugar with an electric beater add the milk, flour with baking powder.

Pour the resulting dough on a baking sheet , which we have rubbed with butter and sprinkled with flour. Align the dough.

Place the prepared baking tray with the dough in the oven and bake for about 15 minutes.

In the meantime, prepare the snow for the cake. Beat the egg whites with a pinch of salt and sugar until stiff.

Into this snow then lightly stir in the washed and dried fruit…. currants. Layer the resulting snow on the pre-baked cake.
6.
Place the cake back in the oven and bake for another 25 minutes. The snow layer will catch a beautiful crispy crust.
7.
After cooling, slice the pie and offer to family, and visitors.
