Cupcakes as a French tarte recipe

20 portions of dough 170 g plain flour 50 g icing sugar 150 g milk as desired (not usually needed) 1 egg yolk for the filling 300 g of fruit to taste 200 g semolina sugar 4 pcs. 1 Mix all the ingredients for the dough until it forms a paste, then place in the fridge for about half an hour. 2 Roll out the dough and cut out circles to place in the moulds (or fill the cupcakes with the dough). Bake at 190 degrees for 15 minutes. 3 While the cupcakes are baking, whisk the egg whites with the snow, then add the sugar and salt. 4 After 15 minutes, remove the cupcakes and fill with fruit and snow – you can add a few more pieces of snow for decoration.
