Cumberland Sauce

Port wine, currant jelly, mustard sauce ….

Ingredients:

Ingredients for 4 people: 8 cl of port wine 8 cl water 60 g candied cherries (or cranberry compote) 1 pc pomeranzas 1 pk lemon 2 tablespoons currant jelly 1/2 tsp mustard 1/2 tsp vinegar cayenne peppercorns pinch of salt

Procedure:

1. Gently grate the zest from a well-washed orange and lemon, squeeze out the juice and strain
2. Boil the zest in water for 5 minutes, then strain the broth and pour it back into the saucepan
3. Add the other ingredients except the cherries (cranberry compote)
4. Simmer again for a while and cool
5. Before serving, add the finely chopped cherries (cranberry compote).
