Let’s face it, sewing up your mouth after three weeks of binge eating is hard and complicated. Therefore, the best way to recover the line is none other than eating healthy and, most importantly, homemade with fun and different recipes like this cucumber and peanut salad very typical in China, with its slightly spicy touch.
All those stews, beans and lentils spectacular that well fancy in this season would be good to combine them with soups, light creams or, why not, salads. Yes, why shouldn’t we be able to eat a summer salad now in winter? And mind you, I’m not only referring to those great warm salads, but also to any other that work perfectly both as a starter and as an accompaniment to other dishes.
It is true that, despite the number of different salads around the world, when it comes to making a few Vegetable Recipes to eat; one’s mind goes straight to a mixture of lettuce, tomato and onion. But there is a world of salads out there, especially beyond our borders.
To highlight, oriental salads are characterized by intense flavors, being very aromatic and that acid and spicy balance so well carried. But well, in short, what you have to take into account to make a salad is to have good quality ingredients (not many; do not abuse or saturate) and a balanced dressing with a good oil base.
How to make cucumber salad
. Spanish cucumber, 3 pcs Fresh chives, 25 g Peanut, 50 g Hot chili powder, 1 tbsp Garlic, 1 clove Soybean, 2 tbsp Rice vinegar, 1 tsp Peanut butter, 1 tbsp Salt, t/s Peel and cut the cucumber into small sticks. Place in a fine sieve, add a teaspoon of salt and let it sit for half an hour or so to release all its water. Meanwhile, finely chop the chives (the chives, especially, like all good herbs, must be worked with a very sharp knife so that they are cut and not crushed) and the peanuts. Mix with a good spoonful of hot chili flakes (to each person’s taste, but a spicy touch goes very well and balances with the rest of the flavors). In a separate bowl, very, very finely chop the garlic (or run it through a food processor or crush it) and mix very well with a dash of soy, a dash of rice vinegar and a good tablespoon of peanut butter. Emulsify and integrate until a homogeneous sauce is obtained. You can add a tablespoon of water if you want a more liquid texture and also some citrus more like lemon juice. Drain the cucumber of any water it may have and dress with the peanut dressing. Integrate very well being careful not to break it up and add the peanut, chive and chili mixture. Save some of the dressing and the mixture. To finish the dish, place a cucumber base, a spoonful of the sauce and the part of the peanut, chive and chili mixture that had been saved.
