Cuban Picadillo

There are many variations of this recipe, the ingredients also vary by region. Each family has its “best” recipe.

Ingredients:

1 kg of ground meat (pork or pork+beef) 10-12 green pickled olives without brine 6-8 pcs of allspice 4 pcs garlic cloves 4 pcs smaller potatoes 2 pcs bean leaves 1 pcs meaty bell peppers 1 pcs larger onions 4 tbsp of tomato puree 1 handful fresh basil leaves vegetable oil crushed cumin oregano water

Procedure:

  • chop the peeled onion and garlic finely, remove the pepper cores and cut them into small cubes, cut the peeled potatoes into cubes, fry them in a little oil until golden brown
  • .

  • Fry the onion, garlic and paprika in hot oil, add the purée, season with oregano and crushed cumin, pour in 1 dcl of water, stir, add the bay leaves and allspice, simmer for about 5 minutes
  • At this stage add the minced meat and olives to the pot, stir everything together, pour in half a litre of water, season with salt and pepper, simmer covered for a further 20 minutes
  • SimmerRemove the lid, add the roasted potatoes, simmer for another 10 minutes
  • Finally, stir the basil leaves into the mixture, season the dish with spices to taste, add salt if necessary and serve.
