Add butter to the boiling milk

When the milk and butter starts to boil, add the semolina, add salt and cook a thick porridge, stirring constantly.

Hard boil the eggs – cook them for about 9 minutes from the moment the water boils.

Add 1 egg yolk and hard boiled chopped egg to the lukewarm porridge.

Make the mixture and make 12 muffins, which are coated progressively in egg white beaten in milk and breadcrumbs.

Fry the croquettes in hot lard in a frying pan or, for convenience, in a deep fryer.
