Crispy onion rings, the easiest recipe to make at home

Although in itself seems a simple recipe, when talking about fried food there is usually always some hidden trick. It is clear that we want to get away from the fried mushy and sad and for that it is important to follow a good batter but also know how to maintain a good oil temperature, key to a crispy exterior and not greasy.
Ingredients
White onion, 1 u Whole milk, 500 ml Lemon, 1 u Vinegar, 1 tbsp Wheat flour, 130 g Corn flour (for arepas), 70 g Salt, 1 tbsp Sweet or spicy paprika, 1 tsp Abundant oil for frying
Step 1
In a bowl place the milk with the lemon juice and vinegar, stir and let stand 5 minutes, stir every minute to get the milk to cut creating what the English call the buttermilk.
Step 2
Peel the onion which is recommended to be large and shiny to get better onion rings. Once peeled, very carefully and with the help of a good knife cut in the shape of a ring transversely, we will remove discs of the onion itself. Once the disks are obtained, carefully and one by one we will remove all the rings that make up each of them, separating them well. The smaller parts are also used, although they are not shaped like onion rings, they are delicious once fried.
Step 3
Insert the onion rings in the milk with the lemon juice and vinegar, soaking them all well, and let them rest at room temperature for 30 minutes to 1 hour. In the middle of the time it is good to give everything a turn to make sure that they are covered in the same way. This will make the onion ring more tender and lose that onion flavor strength that can be unpleasant.
Step 4
Prepare a mixture with the two flours, the salt and the paprika and also a pot or deep frying pan where to fry the onion rings if we don’t have a deep fryer. More or less we will need about 500ml of oil (soft olive I recommend you) so that the rings are well fried. We will heat the oil to 180ºC approximately, we need it to be hot but not too hot, we must think that the onion ring takes about 5 minutes to fry so that the inside is tender.
Step 5
One by one, remove all the onion rings from the buttermilk and dip them in the flour mixture, making sure they are completely covered everywhere. Once coated, we will put them on a plate to have them ready for frying.
Step 6
Fry the onion rings in the hot oil, adding about 6 at a time, so that the oil is not saturated. It will not be necessary to turn them over if you have used enough oil. Allow to toast for 3-5 minutes until the outer layer is golden brown and crispy and the inside is tender. Remove the crispy onion rings to an absorbent paper towel to lose the excess fat and enjoy alone or with a good sauce.
Tricks and Tips
This same process can be done with spring onions, red onion and leeks and is just as good, it is the perfect starter for an informal dinner or lunch although it has to be done at the moment to be enjoyed properly. They can be taken alone, as is, although they will always appreciate some spicy sauce or not, to dip with them.
