Crispy baguette with Rio Mare tuna, smoked quail egg and salad

The recipe of Jakub Chlad, who won third place in the second year of the competition Snack of the Year with Rio Mare.

Ingredients:

Several ingredients (4 servings): 4 pieces sliced cereal baguettes 4 piecesquail’s eggs 120 g Rio Mare tuna in its own juice 100 g cherry tomatoes 80 g beans in pickle 60 g of arugula For topping: 40 g of Rio Mare Paté tuna cream 1 tbsp 1 tsp Ponti balsamic vinegar 1 tsp Dijon mustard 1 tsp milk 1 teaspoon honey vinegar and water to cover eggs

Procedure:

1. Cut 4 longer slices from the baguette, about 1 cm thick, diagonally and brush them lightly with olive oil and toast them in the oven
2. Prepare the dressing. Mix the chopped tomatoes with the drained beans and dressing
4. Finally, lightly stir the cleaned arugula into the salad
5. In hot water (about 90 °C) with vinegar, prepare the eggs in the usual way
