Crépes soufflées – baked pancakes

Pancakes:
250 g flour 4 pcs egg 1/2 liter milk 1 tbsp oil 60 g butter 1 pinch salt
Cream:
75 g sugar 1/4 litre milk 25 g flour 6 pk egg 1 packet vanilla sugar 2 tbsp orange liqueur 20 g butter

Prepare the pancakes in the usual way.

Cream: Beat the egg yolks with the sugar, stir in the flour and mix. Slowly add the hot milk. Pour the smooth mixture into a saucepan and cook the cream for 1 minute, stirring constantly. Then set aside, add the vanilla and liqueur. Leave to cool. Whisk in the cream and fold it into the cool cream.

Spread the cream over the pancakes, roll them up, place them in a greased ovenproof dish, pour the melted butter over them and put them in the oven for about 15 minutes.
