Creamy zucchini soup (sweet and sour)

ingredients

4 tbsp olive oil 1 pk onion 1 clove garlic 1 pk large zucchini (or 3 small) pk salt 2 dl water 2,5 dl cream (or Italian panna) 1 tbsp brown sugar 2 tsp fresh dill 1 tbsp vinegar 1 slice butter

Fantastic quick meatless dinner.

In a large saucepan, sauté finely chopped onion in oil. Add garlic towards the end.

And then add the grated zucchini, season with salt and stir.

Wet with water.

Bring to the boil and cook covered for about 20 minutes.

When the zucchini is soft, pour the cream over the mixture.

Whip the zucchini with a stick blender until smooth.

Make a sweet and sour sauce to taste – add brown sugar, vinegar, and salt.

Finish with fresh dill, stir and set aside (no longer cooking).

9.

Serve with boiled potatoes and ox eye.
