2 pcs onion 2 cloves garlic 1 kg tomato 3 olive oil 1 KL sugar to taste salt to taste ground black pepper 1 sprig thyme 1 sprig rosemary 1 pk bay leaf 500 ml meat broth a little basil 2 tbsp grated hard cheese 1 pk mozzarella a little oil
procedure
1. Peel the onion and garlic, chop finely and fry in hot oil. Wash the tomatoes, cut into quarters and add to the pot. 2. Season the mixture with salt, pepper and herbs. Stir everything together, pour in the hot meat stock and cook the soup over a low heat. 3. Then blend, strain through a sieve, season and pour into plates. Add the grated hard cheese and the mozzarella cut into small pieces. Garnish the soup with chopped basil.
