Creamy mushroom pasta with caramelized onions

2 tbsp olive oil 3 pcs onion 1 pinch salt 1 tbsp balsamic vinegar 1 tbsp olive oil 10 pcs mushrooms 250 g pasta 2/3 cups cream 1/3 cup milk 1 cup grated Parmesan 1 bunch spring onions

1. Heat a tablespoon of olive oil in a skillet over high heat. Add the sliced onion and fry, stirring constantly, until golden. Then reduce the heat and sauté over a medium heat for about 10 minutes. Season with salt and drizzle with balsamic oil. 2. In another pan, fry the finely chopped mushrooms with a pinch of salt in the remaining hot oil. Saute them over a medium heat for about 20 minutes, stirring occasionally. In the meantime, cook the pasta according to the instructions on the package. 3. Add the scallions to the mushrooms, stir in the cream, Parmesan milk, spring onions and salt to taste. Let the sauce come to a simmer, set aside, mix with the pasta and serve.
