Creamy artichoke soup

2 pcs potatoes 1/2 ml water 2 pcs shallots 2 tbsp olive oil 6 pcs artichokes to taste salt 2 tbsp sour cream to taste herbs

Peel the potatoes and cut them into larger cubes. Chop the shallots finely. Drain the cooked artichokes and chop finely.

In a deep frying pan or large pot, fry the shallots in oil. Add the potatoes and artichokes and sauté in the hot oil for about 2 to 3 min. Pour in water, add salt and let cook for about 40 min.

Add sour cream and stir well. Remove from burner and add finely chopped herbs.

The soup can then be blended. Serve warm.
